Jesus Christ was crucified on the Cross, and was the ultimate and final sacrifice. (That's why we don't do animal sacrifices anymore, but that's another story.)

Anyway, Churches use the cross in remembrance of Jesus and his assention back to heaven, so we put crosses on graves, as another great loss (the loss of a life) in remembrance of the person, who has moved on to heaven, to live with God and Jesus.

That's my personal feeling anyway.
